Honestly, I just read so much fanfiction that I started coming up with my own stories in my journal (and became a big multishipper). I figured I may as well try and get them out there!
I like a lot of fandoms, but primarily Undertale/Deltarune, BNHA, Sanders Sides, LoZ, Tangled the Series, FNAF:SB, and ATLA (and there's not a lot of fanfiction, but Wings of Fire is the best books series ever)
