Summary
Hobbits, when in a deep sleep, sleep like they're dead. They grow cold, breath less, and they're heart beats slow. It's normal for hobbits and completely safe. In hindsight, Bilbo probably should have mentioned this to the two princes before they settled in for the night. Cue panicked dwarves and a very confused hobbit.
